Baked Salsa Chicken

Ingredients:

  • 1 lb boneless, skinless chicken breast- equal thickness
  • 2 TB vegetable oil
  • 2 TB lime juice
  • 1 tsp honey
  • 1 cup finely crushed tortilla chips
  • 1 16 oz. jar of salsa
  • 1/3 cup shredded Mexican cheese
  • cilantro, optional

Directions:

Preheat oven to 350. In small bowl, combine oil, lime juice, and honey. Put crushed chips on plate. Spray baking dish with oil. Dip chicken in wet mixture and then in crushed chips. Sprinkle any leftover crushed chips on top of chicken. Bake uncovered at 350 for 20-25 minutes until chicken reaches 165. Cover with salsa and cheese and return to oven for an additional 5 minutes. Top with cilantro and serve with rice of Zippy Beans and Rice.
